Chicken Gnocchi Soup

Instructions
Prepare vegetables
Dice the onion, mince the garlic, and slice the carrots and celery.
Sauté aromatics
Heat a large pot and sauté the onion, garlic, carrots, and celery until softened.
Add tomato paste and stock
Stir in tomato paste, then pour in chicken stock and water.
Season and simmer
Season with garlic powder, Italian spices, oregano, salt, and pepper. Bring to a simmer and cook until vegetables are tender.
Finish with cream and gnocchi
Stir in half & half and gnocchi. Cook until gnocchi float and soup thickens slightly.
Serve with toppings
Ladle soup into bowls. Top with shredded mozzarella, grated Parmesan, and chopped parsley.
