Instructions
Preheat oven
Preheat the oven to 180°C.
Sauté vegetables
Heat olive oil in a pan over medium heat. Add diced onion and bell pepper and cook until softened.
Cook ground turkey
Add ground turkey to the pan and cook until browned.
Add spinach
Add spinach and cook until wilted. Season with salt and pepper.
Prepare egg mixture
In a bowl, whisk eggs with salt and pepper.
Assemble casserole
Spread the cooked turkey and vegetable mixture in a baking dish. Pour the egg mixture over it and sprinkle with shredded cheddar cheese.
Bake the casserole
Bake in the preheated oven for 25-30 minutes until the eggs are set and the top is golden.
