Healthy Oatmeal Chocolate Chip Cookies

Instructions
Preheat oven
Preheat oven to 175°C and prepare a lined baking sheet.
Cream butter and maple syrup
Cream together the softened butter and maple syrup until smooth.
Add eggs and vanilla
Mix in the egg, egg yolk, and vanilla extract until well combined.
Add dry ingredients
Add the spelt flour, baking soda, cinnamon, salt, and optional nutmeg. Stir until just combined.
Fold in oats and mix-ins
Fold in the rolled oats and chocolate chips (or nuts) until evenly distributed.
Chill dough
Place the dough in the fridge for at least 30 minutes to firm up.
Shape cookies
Divide the chilled dough into 18 portions and place on the lined baking sheet.
Bake cookies
Bake for 10 minutes until the edges are lightly golden.
Cool cookies
Let cookies cool on the pan for a few minutes before transferring to a wire rack.
