No-Bake Oreo Cheesecake
Ingredients
Crust
chocolate sandwich cookies (crushed)

coconut oil (melted)
60 ml
Cheesecake Filling
full-fat coconut milk (chilled)
400 ml
coconut yogurt
300 g
chocolate sandwich cookies (crushed)
12 pcs
maple syrup
80 ml
vanilla extract
10 ml
lemon juice
15 ml
Instructions
Prepare the crust
Crush the chocolate sandwich cookies and mix with melted coconut oil to form the base.
Press the crust
Press the cookie mixture firmly into the bottom of a springform pan or baking dish.
Prepare the filling
Whip chilled coconut milk, coconut yogurt, maple syrup, vanilla extract and lemon juice until fluffy and creamy.
Add crushed cookies
Gently fold in the crushed chocolate sandwich cookies into the cheesecake batter.
Assemble and chill
Pour the batter over the crust and smooth the top. Chill in the refrigerator for 4 hours until set.
Serve
Slice and serve the chilled no-bake cheesecake.
