Instructions
Cook pasta
Boil pasta in salted water according to package instructions until al dente. Drain and let cool slightly.
Prepare pasta chips
Toss cooked pasta with olive oil, grated parmesan, onion powder, garlic powder, salt, and pepper. Spread evenly on a baking sheet.
Bake pasta chips
Bake at 200°C for 12-15 minutes until golden and crispy, stirring halfway through.
Prepare salad
Finely chop cucumber, red onion, pickles, chives, parsley, and dill. Mix yogurt, mayonnaise, Dijon mustard, lemon juice, garlic powder, paprika, salt, and pepper in a bowl. Add chopped vegetables and herbs. Mix well.
Assemble and serve
Combine crispy pasta chips with the yogurt salad. Toss gently and serve immediately.
