Prepare oven and pan

Preheat the oven to 200°C. Line a 20cm springform pan with parchment paper, allowing it to extend above the edges for the characteristic burnt top.

Beat cream cheese and sugar

In a large bowl, beat room temperature cream cheese with sugar until smooth and creamy, about 2-3 minutes.

Add eggs one by one

Add eggs one at a time, mixing well after each addition until fully incorporated.

Add cream and dry ingredients

Pour in heavy cream, then add flour and salt. Mix until smooth and well combined.

Bake the cheesecake

Pour the batter into the prepared pan and bake at 200°C for 50 minutes until deeply golden and set with a slight jiggle in the center.

Cool completely

Remove from oven and let cool to room temperature in the pan, then refrigerate for at least 2 hours before serving.
