30-Minute One Pot Pasta
A quick and flavorful one-pot pasta loaded with vegetables, ready in just 30 minutes for an easy weeknight dinner.

Instructions
Prepare vegetables
Dice onion and bell pepper, mince garlic.
Sauté aromatics
Heat olive oil in a large pot, add onion and garlic, cook until fragrant.
Add remaining vegetables
Add bell pepper and cook for 2 minutes.
Add tomatoes and pasta
Pour in crushed tomatoes, add pasta and enough water to cover. Season with salt and pepper.
Cook pasta
Bring to a boil, then simmer until pasta is al dente, stirring occasionally.
Finish and serve
Remove from heat, stir in parmesan and basil. Serve hot.
