Equipment

Oven
20cm square cake pan
Baking paper
Heatproof bowl
Saucepan
Metal spoon

Ingredients

Ingredients

unsalted butter (chopped)

125 g

dark chocolate (chopped)

125 g

eggs (lightly whisked)

3 piece

white sugar

335 g

plain flour

115 g

Dutch cocoa powder

30 g

vanilla extract

1 tsp

salt

1 pinch

Instructions

1

Preheat oven and prepare pan

Preheat oven to 180°C. Grease a 20cm square cake pan and line with baking paper.

5 min180°C
Use a metal baking pan for best results - it conducts heat better than glass or ceramic
2

Melt butter and chocolate

Place butter and chocolate in a heatproof bowl over a saucepan of simmering water. Stir until melted and smooth.

5 minLow heat
Don't let the bowl touch the water - this prevents overheating the chocolate
3

Combine wet and dry ingredients

Remove from heat and quickly stir in eggs, sugar, flour, cocoa powder, vanilla extract and salt until just combined.

2 min
Mix just until combined - overmixing will result in cakey brownies instead of fudgy ones
4

Bake the brownies

Pour batter into prepared pan. Bake for 30 minutes or until a skewer inserted in the center comes out with moist crumbs clinging.

30 min180°Ctimer 30 min
For extra gooey brownies, bake slightly less than 30 minutes. For firmer brownies, bake an extra 2-3 minutes
5

Cool completely

Remove from oven and set aside to cool completely in the pan before cutting.

60 min
Do not cut brownies too early - they need to set completely to avoid falling apart

Storage

Fridge: 4 days
Freezer: 90 days
Reheat: Room temperature or warm in microwave for 10-15 seconds

Store in an airtight container. Wrap uncut brownie in 2 layers of foil and 1 layer of plastic wrap for freezing. Tastes even better the next day
