Homemade Sprite
A refreshing homemade citrus soda made with fresh lemon and lime zest, real sugar, and sparkling water that tastes fresher than store-bought Sprite.

Lemon-Lime Syrup

Instructions
Prepare the citrus zest and sugar base
Place the sugar in a medium bowl and rub the lemon and lime zest into it until fragrant and fully incorporated.
Dissolve the sugar with boiling water
Pour boiling water into the bowl and whisk until the sugar completely dissolves, creating a fragrant syrup.
Strain the syrup
Strain the lemon-lime syrup through a fine sieve into another bowl to remove the zest pieces.
Cool the syrup
Let the syrup cool to room temperature before using.
Assemble each serving
Fill a glass with ice, add about 60ml of the cooled syrup (or to taste), the juice of half a lime, and top with chilled sparkling water. Stir gently and enjoy.

Storage
Store the syrup in a clean glass jar in the refrigerator. The prepared drink loses fizz quickly so serve immediately after assembly.
