Traditional Indian milk fudge made by slowly reducing milk with sugar and aromatic cardamom, shaped into soft, melt-in-your-mouth pedas.

Reduce the milk

Pour the milk into a heavy-bottomed pan and bring to a gentle boil over medium heat, stirring occasionally to prevent scorching.

Stir every 2-3 minutes to prevent milk from sticking to the bottom

Add sugar and ghee

When the milk has reduced to about one-third, add the sugar and ghee. Continue cooking on low-medium heat, stirring continuously.

The mixture should start pulling away from the sides of the pan

Add cardamom and finish

Stir in the ground cardamom. Continue cooking until the mixture reaches a dough-like consistency and starts to leave the sides completely.

Shape the pedas

Remove from heat and let the mixture cool for 5 minutes. Grease your hands with a little ghee and shape into small round pedas. Garnish with chopped pistachios.
