Marinade

Dried oregano1 tbsp
Olive oil60 ml
Lemon1 piece

zested, juiced

Salt1 tsp
Black pepper0.5 tsp
Garlic3 clove

Red wine vinegar30 ml
Red shallot1 piece

finely chopped

Paprika0.75 tsp
Greek yogurt90 g

Instructions

Prepare the meat

Clean and cut 900 g chicken (or pork) into 1.3–2.5 cm cubes.

Make the marinade

In a bowl combine oregano, olive oil, lemon zest and juice, salt, pepper, grated garlic and optional ingredients if using.

Marinate the meat

Add cubed meat to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (ideally 2–4 hours).

Thread the skewers

Thread marinated meat onto skewers, leaving a small gap between pieces for even cooking.

Grill the souvlaki

Preheat grill to medium-high. Grill skewers 10–12 minutes, turning every 3–4 minutes, until nicely charred and cooked through.

Rest and serve

Let skewers rest 3 minutes, then serve with tzatziki, pita, rice or salad.
