Prepare the onions

Peel and thinly slice 1.5 kg of onions.

Caramelize the onions

Melt butter with olive oil in a large pot. Add the sliced onions and cook, stirring regularly, until deeply caramelized and golden brown, about 45 minutes.

Deglaze with white wine

Add white wine to the caramelized onions and scrape the bottom of the pot to release all the flavorful bits.
