French Onion Soup
Classic French onion soup with deeply caramelized onions in rich beef broth, topped with toasted baguette and melted Gruyère and Parmesan cheese.

Instructions
Prepare the onions
Peel and thinly slice 1.5 kg of onions.
Caramelize the onions
Melt butter with olive oil in a large pot. Add the sliced onions and cook, stirring regularly, until deeply caramelized and golden brown, about 45 minutes.
Deglaze with white wine
Add white wine to the caramelized onions and scrape the bottom of the pot to release all the flavorful bits.
Add broth and flour
Sprinkle flour over the onions, then gradually add beef broth while stirring. Add Worcestershire sauce, thyme, bay leaves, and sugar.
Simmer the soup
Bring to a gentle simmer and cook for at least 1 hour to develop rich flavors. Remove thyme and bay leaves before serving.
Prepare the bread topping
Slice the baguette into thin rounds. Mix melted butter with chopped parsley and salt. Brush the bread slices with herb butter.
Toast the bread
Arrange buttered bread slices on a baking sheet and toast in the oven at 190°C for 10 minutes until golden and crisp.
Assemble the soup
Ladle soup into oven-safe bowls. Top each with grated Gruyère and Parmesan, add toasted bread slices, and sprinkle with more cheese.
Broil the soup
Place assembled bowls in the oven at 190°C for 15 minutes until cheese is melted, bubbly, and golden brown.
Garnish and serve
Garnish with freshly chopped chives and serve immediately while hot and bubbling.
