Prepare the milk base

Combine milk and condensed milk in a heavy-bottomed pot and bring to a gentle boil.

Reduce the milk

Simmer the milk mixture on low heat, stirring frequently, until it reduces by half and thickens.

The mixture should become pale yellow and have a creamy consistency.

Add cream and spices

Remove from heat and stir in heavy cream and cardamom powder. Let the mixture cool completely.

Prepare nuts

Roughly chop pistachios and almonds for texture and garnish.

Freeze the kulfi

Pour the cooled mixture into kulfi moulds or small cups. Sprinkle with chopped nuts and freeze for 6 hours or overnight.

Serve

Run warm water over the moulds to release the kulfi. Serve immediately.

Store in airtight container or covered moulds to prevent freezer burn. Best consumed within 2 weeks.

Notes

This recipe uses condensed milk as a natural sweetener instead of added sugar.

For a vegan version, substitute with coconut milk and plant-based condensed milk.
