ripe bananas (ripe)
3 piece
unsalted butter (room_temperature)
127 g
large egg (room_temperature)
1 piece
brown sugar (packed)
150 g
white sugar
50 g
all-purpose flour
188 g
baking soda
5 g
baking powder
2.5 g
salt
3 g
cinnamon (ground)
2.5 g
vanilla extract
5 ml
semi-sweet chocolate chips
200 g
Instructions
Brown the butter
Add butter to a saucepan over medium heat. Stir often until it melts, foams, sizzles, then turns golden with a nutty smell.
Cool the browned butter
Once browned, pour into a bowl and place in the freezer for 5 mins. You want it warm, not hot.
Mash bananas and mix wet ingredients
In a large bowl, mash bananas until mostly smooth. Add 1/2 cup of the browned butter, brown sugar, white sugar, egg, and vanilla. Whisk for 1 to 2 mins until glossy.
Add dry ingredients
Add flour, baking soda, baking powder, salt, and cinnamon. Mix very thoroughly so everything is evenly distributed.
Preheat oven
Preheat oven to 175°C.
Fold in chocolate chips
Once no dry flour remains, fold in about 1 cup of chocolate chips. Save the rest for topping.
Prepare loaf pan
Line or grease a loaf pan and pour in the batter. Sprinkle remaining chocolate chips on top.
Bake the bread
Bake for 60 mins, loosely covering with foil halfway through to prevent over-browning.
Check for doneness
Insert a toothpick into the center. It should come out with a few moist crumbs, not wet batter. If needed, bake an extra 5 to 10 mins.
Cool and slice
Let cool slightly, then slice and enjoy.
