Instructions
Mix dry ingredients
Whisk together flour, baking soda and salt in a bowl.
Cream butter and sugars
In a large bowl, cream together room temperature butter, brown sugar and white sugar until light and fluffy.
Add wet ingredients
Beat in the whole egg, egg yolk, Biscoff butter and vanilla extract until smooth.
Combine wet and dry
Gradually add the dry ingredients to the wet mixture and mix until just combined.
Add mix-ins
Fold in white chocolate chips and crushed Biscoff cookies.
Chill dough
Scoop dough into balls and chill in the refrigerator for 20 minutes.
Bake cookies
Preheat oven to 200°C. Bake cookies for 10 minutes until edges are golden.
