2 tbsp

3 pcs

1 tsp

0.5 tsp

2 tbsp

Instructions

1

Prepare the potatoes

Cut potatoes into bite-sized chunks, about 2-3 cm pieces.

Start testing at 8 minutes to avoid overcooking
3

Dry the potatoes

Drain potatoes in a colander and let them steam-dry for 2 minutes. This helps achieve maximum crispiness.

2 min
Shaking the colander helps remove excess moisture
4

Coat with cornstarch

Return potatoes to the pot and sprinkle with cornstarch. Gently toss to coat evenly - this creates the crispy exterior.

2 min
Use a gentle shaking motion rather than stirring to avoid breaking
5

Roast until crispy

Spread potatoes on a baking sheet in a single layer. Drizzle with olive oil and season with salt and pepper. Roast at 220°C for 20-25 minutes, flipping halfway through.

Don't overcrowd the baking sheet - use two sheets if needed
6

Prepare chilli honey sauce

While potatoes are roasting, heat olive oil in a small pan over medium heat. Add minced garlic and chopped chilli, sauté for 1-2 minutes until fragrant. Stir in honey and remove from heat.

3 minMedium heattimer 2 min
Watch carefully - garlic burns easily
7

Toss potatoes in sauce

Remove crispy potatoes from the oven and immediately toss in the warm chilli honey sauce. Serve hot.

2 min
Work quickly while potatoes are hot for best sauce adhesion

Storage

Fridge: 2 days
Reheat: Oven 200°C for 8-10 minutes to restore crispiness

Best served immediately. Leftovers lose crispiness but can be reheated in oven
