Instructions
Prepare the cilantro lime sauce
Mix sour cream, lime juice, chopped cilantro, minced garlic, salt, and pepper in a bowl until smooth and creamy.
Sauté aromatics
Heat olive oil in a pan over medium heat and cook diced onion and minced garlic until fragrant and translucent.
Cook the ground beef
Add ground beef to the pan and cook, breaking it up with a spatula until browned and fully cooked.
Assemble the tacos
Spoon the cheesy beef mixture into crispy taco shells and top with shredded cheddar cheese.
Finish and serve
Drizzle each taco generously with the cilantro lime sauce and serve immediately while hot.
