Instructions
Make the dough
Combine flour, eggs, olive oil and salt on a clean surface or in a large bowl.
Knead the dough
Knead the dough for 8-10 minutes until it becomes smooth and elastic.
Rest the dough
Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.
Roll out the dough
Divide the rested dough into portions and roll out each portion into thin sheets.
Cut the pasta
Cut the rolled dough into your desired pasta shape (fettuccine, tagliatelle, etc.).
Cook the pasta
Bring a large pot of salted water to a boil and cook the fresh pasta for 2-4 minutes until al dente.

Storage
Fresh pasta can be stored in the refrigerator for up to 2 days or frozen for up to 1 month. Dust with flour before freezing to prevent sticking.
