Cook the noodles

Cook noodles according to package instructions, rinse with cold water and toss with 1 tsp oil to prevent sticking.

Prepare vegetables

Slice green parts of spring onions into rings and set aside. Chop white parts and dice remaining vegetables into small pieces for quick cooking.

Stir-fry vegetables

Heat oil in a pan and first stir-fry broccoli and carrot strips. Add onion, white spring onion parts and cabbage, continue frying until crisp-tender.

Cook the eggs

Beat eggs with a pinch of salt. Push vegetables aside, add oil to the empty space and quickly scramble the eggs, then mix with the vegetables.

Combine noodles and sauce

Push everything aside, add noodles and press down lightly. Fry for 2 minutes to develop roasted flavors. Add sauce and mix thoroughly. Finally fold in bean sprouts and green spring onion rings.
