Instructions
Prepare Cookie Dough
Cream butter and sugars until light and fluffy, then add egg and vanilla.
Mix Dry Ingredients
Whisk together flour, baking soda, salt, cinnamon, and nutmeg.
Combine Wet and Dry Ingredients
Gradually add dry ingredients to wet mixture and mix until just combined.
Chill Cookie Dough
Cover dough and refrigerate for 30 minutes to prevent spreading.
Cook Apple Filling
Sauté diced apples with butter, brown sugar, cinnamon, and cornstarch until softened.
Prepare Salted Caramel
Melt sugar until amber, then carefully add cream and butter. Stir in sea salt.
Form Cookies
Scoop dough, create indent, fill with apple mixture, and top with more dough.
Bake Cookies
Bake at 175°C for 12-15 minutes until golden brown around edges.
Finish with Caramel
Drizzle warm cookies with salted caramel and sprinkle with sea salt flakes.
