Chocolate Chip Cookie Brownies

Instructions
Prepare brownie batter
Melt butter and dark chocolate together in a heatproof bowl over simmering water or in the microwave. Stir until smooth.
Mix brownie wet ingredients
Whisk granulated sugar into the melted chocolate mixture. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
Add dry ingredients to brownie batter
Sift flour, cocoa powder and salt into the wet mixture. Fold gently until just combined. Do not overmix.
Prepare cookie dough
Cream softened butter with brown sugar and granulated sugar until light and fluffy. Add egg and vanilla, mixing until incorporated.
Finish cookie dough
Mix in flour, baking soda and salt until just combined. Fold in chocolate chips.
Assemble brookies
Preheat oven to 180°C. Line a 20×20 cm baking pan with parchment paper. Spread brownie batter evenly in the pan. Drop spoonfuls of cookie dough over the brownie layer and gently press down.
Bake brookies
Bake for 30-35 minutes until the cookie dough is golden and a toothpick inserted into the brownie comes out with moist crumbs.
Cool and serve
Let the brookies cool completely in the pan before slicing into squares.
Storage
Store in an airtight container. Can be frozen individually wrapped.
