Instructions
Marinate the chicken
Combine all marinade ingredients and coat the chicken thighs. Refrigerate for at least 1 hour, up to overnight.
Prepare the dredge mixture
Mix all dredge ingredients together in a bowl until evenly combined.
Heat the oil
Heat oil in a deep pot or fryer to 177°C (350°F).
Double dredge the chicken
Remove chicken from marinade, letting excess drip off. Coat in flour mixture, return to marinade, then coat in flour again for extra crispy crust.
Fry the chicken
Fry chicken in batches, careful not to overcrowd, for 5-7 minutes until internal temperature reaches 74°C (165°F). Drain on wire rack.
Prepare garlic butter
Mix softened butter with grated garlic and minced parsley.
Toast the buns
Brush garlic butter on inner halves of brioche buns and toast in oven at 177°C (350°F) for 8-10 minutes until golden.
Make hot honey glaze
Combine all glaze ingredients in a small saucepan and simmer for 2-3 minutes until well combined.
Coat chicken with glaze
Brush hot honey glaze onto fried chicken or toss pieces in a bowl to coat evenly.
Assemble the sliders
Build each slider: toasted bun bottom, ranch dressing, glazed chicken, pickles, top bun. Brush remaining garlic butter on top bun.
