Create flour nest

Place the flour on a clean work surface and make a nest. Add the eggs, olive oil, and salt to the center.

Knead the dough

Use your hands to gently bring the flour inward to incorporate. Continue working the dough to bring it together into a shaggy ball. Knead for 8-10 minutes until smooth.

If dough seems too dry, sprinkle with water. If too sticky, dust with flour

Rest the dough

Shape the dough into a ball and wrap in plastic wrap. Let rest at room temperature for 30 minutes.

Divide dough

After resting, slice the dough into 4 equal pieces.

Prepare pasta sheets

Flatten one piece into an oval disk. Run through pasta maker on widest setting (level 1) three times. Fold dough if desired, then continue rolling through levels 2-6.

Cut and cook pasta

Run pasta sheets through desired cutter attachment. Cook noodles in boiling salted water for 1 minute until al dente.

Reheat: Boil fresh or frozen pasta for 1-2 minutes

Dust fresh pasta with flour and store loosely covered in refrigerator, or freeze in single layers
