Four Cheese Pizza
Ingredients
Dough

semolina

Four Cheese Base
mascarpone
250 g
mozzarella (grated)
60 g
parmesan (grated)

blue cheese
150 g
salt

To Finish
mozzarella (grated)

chives (chopped)

hot honey
30 ml
truffle oil
10 ml
Instructions
Mix and knead dough
Combine flour and water in a bowl and mix until a dough forms. Knead for 5 minutes until smooth and elastic.
Divide and rest dough
Divide into 4 balls. Cover and rest for 10 minutes.
Preheat oven
Preheat oven to 240°C.
Roll out pizza bases
Dust bench generously with semolina. Roll each ball into a very thin, long rectangle.
Prepare cheese mixture
Blend mascarpone, mozzarella, parmesan, blue cheese, and a pinch of salt until smooth.
Assemble pizzas
Spread a thin layer of the cheese mixture over each base. Sprinkle with extra mozzarella.
Bake pizzas
Line a baking tray with baking paper and drizzle with olive oil. Place pizza on tray and bake for 10–12 minutes until golden, bubbling, and crisp at the edges.
Finish and serve
Finish with chopped chives, a drizzle of hot honey, and a light drizzle of truffle oil.
