Béchamel Sauce

Instructions
Prepare meat sauce
Heat olive oil in a pan and sauté onion, carrot and celery until soft. Add ground meat and brown it. Add tomato sauce and red wine. Simmer for 40 minutes.
Make béchamel sauce
Melt butter, add flour and cook for 2 minutes. Gradually add milk while whisking to avoid lumps. Season with nutmeg.
Assemble lasagna
In a baking dish layer meat sauce, lasagna sheets, béchamel and cheese. Repeat layers ending with cheese on top.
Bake lasagna
Bake in preheated oven at 180°C for 40 minutes until golden and bubbling.

Best eaten fresh but can be reheated
