Apricot Dumplings (Meruňkové knedlíky)
Ingredients
Dough
egg yolks

butter (softened)
80 g
granulated sugar
40 g
nutmeg
1 pinch
lemon zest
1 pinch
salt
2 pinch
soft full-fat cottage cheese in block
250 g
all-purpose flour
200 g
Filling
apricots (washed, dried)
12 piece
Serving
hard or soft cottage cheese
100 g
powdered sugar
40 g
melted butter
40 g
Instructions
Prepare the dough base
Whip egg yolks, softened butter, sugar, nutmeg, lemon zest and salt into a light foam.
Add cottage cheese and flour
Fold in cottage cheese, then the flour until a soft dough forms.
Knead and chill the dough
Briefly knead the dough by hand, wrap in cling film and refrigerate for at least 1 hour (or overnight).
Shape dumplings
Cut pieces of dough, flatten into discs and carefully wrap each around a washed and dried apricot. Seal tightly.
Cook the dumplings
Drop dumplings into gently boiling water and cook 5–7 minutes depending on apricot size.
Serve
Serve immediately topped with grated cottage cheese, powdered sugar and a generous drizzle of melted butter.
