Instructions
Prepare soya chunks
Boil soya chunks until soft, drain and squeeze out excess water.
Prepare soya tikka marinade
Mix hung curd, spices, mustard oil, besan, ginger-garlic paste, lemon juice, and salt to form a thick marinade.
Marinate soya chunks
Coat the prepared soya chunks in the marinade and let them absorb the flavors.
Make chipotle dressing
Blend yogurt, chipotle pepper, mayonnaise, lemon juice, garlic, and salt until smooth and creamy.
Cook spiced soya tikka
Pan-fry the marinated soya chunks until crispy and golden on the outside.
Assemble the soya tikka roll
Warm the paratha, spread chipotle dressing, add crispy soya tikka, fresh lettuce, and pickled onions, then roll tightly.
