Instructions
Start the Fries
Soak cut potatoes in cold water to remove excess starch for crispier results.
Prepare Fries for Baking
Drain, dry thoroughly, toss with oil and salt, then arrange on baking sheet.
Bake the Fries
Bake at 220°C for 25-35 minutes, flipping halfway, until golden and crispy.
Make the Caramelized Onions
Cook onions slowly until deeply golden and jammy.
Cook the Burger Patties
Sear patties 2-3 minutes per side until just cooked through.
Prep for Assembly
Preheat oven to 175°C and grease two small oven-safe bowls.
Build the Wellingtons
Layer patties, cheese, sauce, pickles and onions in puff pastry and wrap tightly.
Egg Wash and Season
Brush with egg wash, sprinkle sesame seeds and flaky salt.
Bake the Wellingtons
Bake at 175°C for 30-35 minutes until deep golden brown and crisp.
Rest and Serve
Rest 5 minutes, slice in half and serve with fries and extra sauce.
