Instructions
Preheat oven
Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
Mix wet ingredients
In a large bowl, combine melted coconut oil, brown sugar, maple syrup, and vanilla extract.
Combine dry ingredients
Add rolled oats, flour, baking soda, and salt to the wet mixture and stir until combined.
Fold in chocolate chips
Gently fold in the vegan chocolate chips until evenly distributed throughout the dough.
Form cookie dough balls
Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them 5 cm apart.
Bake cookies
Bake for 10-12 minutes until edges are golden brown. Cool on the sheet for 3 minutes before transferring.
