Garlic Seasoned Chewy Potatoes

Instructions
Cook the potatoes
Wash potatoes thoroughly. Place whole potatoes in a pot with cold water and bring to a boil. Cook until fork-tender, about 20-25 minutes.
Mash the potatoes
Drain the cooked potatoes. While still hot, peel off the skins and mash thoroughly until smooth.
Knead the dough
Add potato starch and water to the mashed potatoes. Knead until a smooth, elastic dough forms. Adjust water if needed based on potato moisture.
Shape the potato pieces
Divide the dough into small portions and roll into small oval or round shapes, about the size of a small mushroom. You should get about 40 pieces.
Prepare the seasoning
In a bowl, combine minced garlic, chili powder, sugar, soy sauce, minced green onion, and avocado oil. Mix well to create the seasoning sauce.
Boil the shaped pieces
Bring a large pot of water to a boil. Add the shaped potato pieces in batches and cook until they float to the surface, about 2-3 minutes per batch.
Toss with seasoning
Drain the cooked potato pieces and immediately toss them in the prepared seasoning sauce while still hot. Mix thoroughly to coat evenly.
Serve
Transfer to a serving plate. Serve hot as a snack or light meal. Best enjoyed immediately while warm and chewy.
