Nutella Chocolate Chip Brioche Buns
Chocolate-filled brioche buns with chocolate chips
Soft, pillowy brioche buns filled with frozen Nutella and studded with chocolate chips for an indulgent sweet treat.

Instructions
Prepare Nutella filling
Scoop 50g portions of Nutella onto separate pieces of parchment paper and freeze until solid.
Mix wet ingredients
In the bowl of your stand mixer fitted with a dough hook, whisk the warm water, sugar, yeast, melted butter, egg yolk and eggs.
Add dry ingredients and knead
Add the flour and salt, then knead for 10-15 minutes until a smooth dough forms. It should still be slightly sticky/tacky to help chocolate chips stick.
First proof
Form the dough into a ball, place in a large bowl, cover with plastic film and proof for 2 hours.
Preheat oven
Preheat your oven to 175°C and line a baking dish with parchment paper.
Incorporate chocolate chips
On a lightly floured surface, gently knead 150-200g of chocolate chips into the dough until just combined. Do not over-knead to prevent smudging.
Shape and fill buns
Divide the dough into 6 pieces. Stuff each piece with frozen Nutella filling, then seal them shut.
Top with chocolate chips
Top each bun with additional chocolate chips.
Prepare egg wash
Whisk 2 egg yolks until smooth and brush over the rolls.
Bake buns
Bake in preheated oven at 175°C for 25 minutes until golden brown.
