Classic American smash burgers with crispy edges, melty cheese, and tangy homemade sauce served on toasted brioche buns.

Burger Sauce
mayonnaise

ketchup

Instructions
Slice the onion
Thinly slice the onion using a mandolin or knife for even cooking and texture.
Form beef balls
Divide the ground beef into 4 equal 4oz (113g) balls for perfect smash patties.
Make the burger sauce
Combine mayonnaise, ketchup, mustard, Worcestershire sauce, pickle juice, smoked paprika, garlic powder, and onion powder in a bowl.
Heat the pan
Heat a cast iron or stainless steel pan on medium-high heat for 2-3 minutes until water beads up on the surface.
Place beef balls and season
Place the beef balls on the hot pan and season generously with salt and pepper.
Smash the patties
Add a small handful of sliced onions on top of each ball and smash down firmly with a spatula to create thin, wide patties.
Cook and flip patties
Cook the smashed patties for 2 minutes until a crust forms, then scrape and flip them over.
Add cheese and toast buns
Place cheese on each patty and add the top bun first, then the bottom bun to the pan to toast.
Assemble the burgers
Once the cheese is melted, assemble each burger with pickles and a generous spread of the prepared burger sauce.
