Beef and Broccoli Stir Fry

Instructions
Prepare vegetables
Cut broccoli into florets, slice ginger, and mince garlic for the stir fry.
Marinate the beef
Combine beef with soy sauce, dark soy sauce, oyster sauce, sugar, baking soda, black pepper, corn starch, water, and oil. Mix thoroughly to tenderize and flavor the meat.
Cook the broccoli
Heat wok over high heat, add a splash of oil, then stir-fry broccoli with ginger for 2-3 minutes until bright green but still crisp. Add water and cover briefly to steam.
Cook the beef
Remove broccoli from wok, add a bit more oil if needed. Add marinated beef and spread in single layer. Stir-fry over high heat until beef is browned but still tender, about 2-3 minutes.
Combine beef and broccoli with sauce
Return broccoli to wok with beef. Add minced garlic, cooking wine, dark soy sauce, oyster sauce, sugar, water, and black pepper. Stir-fry everything together for 2-3 minutes until sauce thickens and coats all ingredients evenly.
Serve hot
Transfer beef and broccoli stir fry to a serving plate. Serve immediately over steamed rice or noodles.
