Quick & Easy Korean Soft Tofu Stew (Soondubu Jjigae)

egg (room temperature)

green onion (sliced)

Prepare ingredients
Dice onion, mince garlic, and slice pork belly thinly.
Sauté aromatics and pork
Heat sesame oil in a pot over medium heat. Add minced garlic and sauté until fragrant, then add pork belly and cook until lightly browned.
Build the spicy broth
Add diced onion, Korean chili flakes, and soy sauce. Stir well, then pour in water and bring to a gentle simmer.
Add soft tofu
Gently slide silken tofu into the simmering broth. Do not stir vigorously to keep tofu intact.
Finish and serve
Crack an egg on top if desired, sprinkle with sliced green onions, and serve immediately while hot.
