Dry Rub

Instructions
Season the chicken
Season the chicken breasts with salt, pepper, chilli flakes, and cayenne.
Marinate the chicken
Add the milk and pickle juice, then let it marinate.
Prepare coating station
Beat the eggs in a bowl and prepare corn flakes in another bowl.
Coat the chicken
Coat the chicken in flour, dip it into the beaten eggs, then press it into the corn flakes, keeping them chunky for extra crunch.
Fry the chicken
Fry at 175°C until golden, crispy, and the chicken reaches 74°C internally.
Prepare spicy oil
Mix the cayenne, paprika, and brown sugar into the hot frying oil.
Toss chicken in spicy oil
Toss the fried chicken straight into the spicy oil until fully coated.
Apply dry rub
Finish with a generous sprinkle of the dry rub.
Serve immediately
Serve immediately while it's crackling hot.
