Instructions
Prepare vegetables and fruit
Cut watermelon, avocado and cucumber into cubes or chunks, slice green onions.
Make the dressing
Mix lime juice, soy sauce and sesame oil in a small bowl.
Assemble the salad
Combine watermelon, avocado, cucumber, edamame, green onion, pickled red onion and optional wakame in a large bowl. Drizzle with dressing and toss gently.
Finish and serve
Sprinkle with toasted sesame seeds and roasted cashews. Serve immediately while chilled.
