Instructions
Cook the pasta
Cook pasta in salted boiling water until al dente according to package instructions.
Prepare and season chicken
Slice chicken breast and season with salt, pepper, and Italian seasoning.
Sear the chicken
Heat olive oil in a pan and sear seasoned chicken until golden and cooked through.
Sauté garlic and sun-dried tomatoes
Add minced garlic and sun-dried tomatoes to the same pan and sauté for 1 minute until fragrant.
Make the creamy sauce
Pour in heavy cream and bring to a gentle simmer. Stir in grated parmesan until melted and sauce thickens slightly.
Add spinach and combine
Add fresh spinach to the sauce and stir until wilted. Return cooked pasta and chicken to the pan and toss everything together.
Serve
Serve hot, garnished with extra parmesan if desired.
