Crispy Beef Tacos

onion (diced)

taco seasoning

Cilantro Lime Sauce
sour cream

mayonnaise
60 ml
lime (juiced)

fresh cilantro (chopped)

Instructions
Prepare cilantro lime sauce
In a bowl, mix sour cream, mayonnaise, lime juice, chopped cilantro, minced garlic and salt until smooth.
Cook the beef filling
Heat a pan over medium heat. Add ground beef and cook until browned, breaking it up with a spatula. Add diced onion and minced garlic, cook until onion is translucent. Stir in taco seasoning and tomato sauce. Simmer for 5 minutes until thickened.
Prepare crispy tortillas
Brush both sides of each tortilla lightly with olive oil. Heat a clean pan or griddle over medium-high heat. Cook each tortilla for 30-45 seconds per side until golden and crispy.
Assemble tacos
Fill each crispy tortilla with a generous portion of the cheesy beef mixture. Sprinkle with shredded cheddar cheese. Serve immediately with cilantro lime sauce on the side or drizzled on top.

Storage
Re-crisp tortillas in a hot pan before serving leftovers. Sauce keeps 3-4 days refrigerated.
