Instructions
Prepare vegetables
Dice onion, carrot, and celery. Mince garlic cloves.
Brown the sausage
Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it up with a spoon.
Sauté vegetables
Add diced onion, carrot, celery, and minced garlic to the pot with the sausage. Cook until vegetables are softened.
Add tomatoes and broth
Pour in the diced tomatoes and chicken broth. Season with salt and black pepper. Bring to a boil.
Cook gnocchi
Add fresh gnocchi to the boiling soup and cook according to package directions until they float to the surface.
Add spinach and cream
Stir in fresh spinach and heavy cream. Cook for 2 minutes until spinach wilts. Serve hot with grated parmesan.
