Strawberry Cheesecake Chia Pudding

Instructions
Blend the chia pudding base
Combine frozen strawberries, milk, Greek yogurt, and honey in a blender and blend until smooth.
Mix in chia seeds
Pour the blended mixture into a bowl, add chia seeds, and whisk until evenly combined.
Refrigerate chia pudding
Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to thicken.
Prepare cheesecake layer
In a medium bowl, beat together cream cheese, Greek yogurt, honey, and vanilla with a hand mixer until smooth.
Assemble parfaits
Divide the chia pudding among 4-6 airtight containers. Top each with cheesecake filling and refrigerate.
Serve with toppings
Top each parfait with sliced fresh strawberries and graham cracker crumbs before serving.
