Instructions
Preheat oven
Preheat the oven to 180°C and line a baking sheet with parchment paper.
Mix dry ingredients
In a bowl, whisk together the flour, cornflour, baking soda and salt.
Cream butter and sugars
In a large bowl, beat the room-temperature butter with brown and white sugars until light and fluffy.
Add eggs and vanilla
Beat in the whole egg, egg yolk and vanilla essence until fully combined.
Combine wet and dry
Gradually add the dry ingredients into the wet mixture and mix just until no flour streaks remain.
Fold in chocolate chips
Gently fold the chocolate chips into the dough until evenly distributed.
Portion dough
Scoop 145–155 g portions of dough and roll each into a ball; place on the prepared baking sheet, leaving space between each cookie.
Bake
Bake in the preheated 180°C oven for 20–25 minutes until golden around the edges but still soft in the center.
Cool cookies
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
