Almond Peach Bread Pudding

Instructions
Prepare the bread
Cut the day-old bread into 2.5 cm cubes and place them in a large bowl.
Prepare the peaches
Slice the peaches into wedges and add them to the bread cubes along with the sliced almonds.
Make the custard
In a separate bowl, whisk together the milk, heavy cream, eggs, sugar, vanilla extract, almond extract, cinnamon, and salt until well combined.
Combine and soak
Pour the custard mixture over the bread, peaches, and almonds. Gently stir to ensure all bread pieces are soaked. Let the mixture sit for 15 minutes to absorb.
Preheat oven
Preheat the oven to 175°C and grease a baking dish with butter.
Assemble and bake
Transfer the soaked bread mixture to the prepared baking dish. Drizzle the melted butter over the top. Bake for 45 minutes until the top is golden brown and the custard is set.
Rest and serve
Remove from the oven and let rest for 10 minutes before serving. Serve warm.
Storage
Best served fresh. Store covered in the refrigerator. Reheat gently to maintain texture.
