Prepare ingredients

Mince the garlic, finely chop the onion and red chillies, and chop the spring onions.

Heat the oil

Heat sunflower oil in a wok or large pan over medium-high heat.

Fry aromatics

Add minced garlic and chopped chillies to the hot oil. Stir-fry for 30 seconds until fragrant.

Add onions

Add the chopped onion and fry for 2 minutes until softened.

Add rice

Add the cold cooked rice to the wok. Break up any clumps and stir-fry for 3-4 minutes.

Season the rice

Add soy sauce, salt, and black pepper. Mix well and cook for another 2 minutes.

Turn off the heat, garnish with chopped spring onions and serve hot.
