Instructions
Prepare Ingredients
Wash rice thoroughly and slice ginger. Cut chicken into small pieces.
Start Cooking Congee
Combine rice, water, chicken, and ginger in a pot. Bring to a boil.
Simmer Congee
Reduce heat and simmer gently until rice breaks down and congee thickens.
Add Century Eggs
Peel and cut century eggs into quarters. Stir into congee.
Season Congee
Season with salt and serve hot with green onions, soy sauce, and chili oil.
