Crispy Beef Tacos

cheddar cheese (shredded)

lettuce (shredded)

Instructions
Prepare the vegetables
Dice the onion, tomato and bell pepper. Mince the garlic.
Cook the beef filling
Heat olive oil in a pan, sauté onion and garlic, add ground beef and cook until browned. Season with taco seasoning.
Warm the tortillas
Warm corn tortillas in a dry pan or microwave until soft and pliable.
Assemble the tacos
Fill each tortilla with the beef mixture, top with diced tomato, bell pepper, shredded lettuce and cheese. Add a dollop of sour cream if desired.
