Prepare ingredients
Mince garlic and ginger, slice green onions, cut chili peppers into small pieces.
Prepare wheat gluten
Cut wheat gluten into bite-sized strips approximately 5cm long and 1cm wide.
Fry the gluten
Heat sesame oil in a wok or large pan over medium-high heat. Add wheat gluten strips and fry until golden and slightly crispy, about 3-4 minutes.
Prepare the spicy sauce
In the same wok, add minced garlic, ginger, and chili peppers. Stir-fry for 30 seconds until fragrant. Add chili flakes, soy sauce, vinegar, sugar, and salt. Mix well.
Combine and coat
Return the fried gluten to the wok and toss to coat evenly with the spicy sauce. Add green onions and stir for 1 minute until everything is well combined.
Serve hot
Transfer to a serving plate and serve immediately while hot. Can be enjoyed as a snack or side dish.
