Cinnamon Sugar Coating

Instructions
Brown the butter
Melt butter in a skillet over medium heat, swirling until it turns golden brown and smells nutty.
Mix wet ingredients
Combine browned butter, pumpkin puree, granulated sugar, brown sugar, egg, and vanilla extract until smooth.
Mix dry ingredients
In a separate bowl, whisk together flour, baking powder, baking soda, pumpkin spice, and salt.
Combine wet and dry
Gradually add dry ingredients to wet mixture and stir until just combined - do not overmix.
Prepare cinnamon sugar coating
Mix granulated sugar and cinnamon together in a small bowl.
Shape cookies
Scoop 2-tablespoon portions of dough, roll into balls, then roll each ball in cinnamon sugar mixture.
