Hasselback Potatoes
Yukon Gold potatoes (whole, washed, dried)

asparagus (fresh, trimmed)

New York Strip Steaks
Prime New York strip steaks (raw, room temperature)

salt (dry)

black pepper (ground)

Instructions
Prepare Hasselback Potatoes
Wash and dry the potatoes. Place each potato between two chopsticks and slice thinly across, being careful not to cut all the way through.
Season and First Bake
Place potatoes in a baking dish, drizzle generously with olive oil, season with salt, and bake at 200°C for 30 minutes.
Prepare Garlic Butter
Mix the softened butter with garlic powder, salt, pepper, and parsley if using.
Second Bake with Butter
Brush garlic butter generously over the potatoes, making sure some gets between the slices. Return to the oven for another 30 minutes.
Prepare Asparagus
Snap off the woody ends of the asparagus.
Sauté Asparagus
Drizzle asparagus with olive oil, season with salt and pepper, and sauté until tender-crisp.
Season the Steaks
Season Prime New York strips generously with salt and pepper on both sides.
Sear the Steaks
Sear steaks in a hot cast iron skillet until a deep crust forms on both sides.
Finish Steaks in Oven
Transfer skillet with steaks to 175°C oven and cook until internal temperature reaches 60°C for medium.
Rest the Steaks
Remove steaks from oven and let rest for 5 minutes before slicing. Spoon pan juices over the top when serving.

Storage
Best served fresh. Reheat potatoes separately to maintain crispiness. Asparagus may become soggy when reheated.

• Choose steaks of similar thickness for even cooking
• Let steaks rest at room temperature for 30 minutes before cooking
