Caramelized Onion Soup

Instructions
Caramelize the onions
Slice the onions into half-rings and caramelize them in some oil with a pinch of salt for 15–20 minutes.
Add aromatics and mustard
Add garlic, thyme, pepper and mustard and briefly sauté.
Melt the cream cheese
Stir in the cream cheese until fully melted.
Add broth and bring to boil
Pour in the vegetable broth and bring to a boil.
Cook the potatoes
Add the potato cubes and simmer for 15 minutes until tender.
Season the soup
Season with salt and pepper to taste.
Garnish and serve
Top with parsley and chili flakes. Toast bread separately and serve on the side.
