Instructions
Prepare the vegetables
Wash, peel, and chop the potatoes, tomatoes, onions, and capsicum into small pieces.
Boil the vegetables
Add the chopped potatoes and green peas to a pot with enough water to cover them. Boil until the potatoes are soft and easily mashed.
Prepare the masala base
Heat butter in a large pan. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown.
Add aromatics and spices
Add garlic paste and sauté for 30 seconds. Then add red chilli powder, turmeric, garam masala, and salt. Cook the spices for 1 minute.
Cook the tomatoes and capsicum
Add the chopped tomatoes and capsicum. Cook until the tomatoes become soft and mushy, about 5-7 minutes.
Mash and simmer the bhaji
Add the boiled potatoes and peas to the masala. Mash everything together with a potato masher. Add water as needed for desired consistency. Simmer for 5 minutes.
Finish and serve
Add edible food colour if using and mix well. Garnish with coriander leaves. Serve hot with buttered pav, chopped onions, lemon wedge, and onion chutney.
